Cook home fries
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes in a single layer and let brown undisturbed 3–4 minutes. Stir and add remaining 1 tablespoon olive oil, diced onion, and red bell pepper. Season with smoked paprika, garlic powder and 1/2 tsp salt. Continue to cook, stirring occasionally, until potatoes are golden and crisp, about 8–10 minutes total. Taste and adjust seasoning.

Toast bread
Toast bread slices until golden. Butter lightly on one side and keep warm.
Hollandaise Sauce

Melt butter
In a small saucepan, melt the 6 tbs unsalted butter over low heat until fully melted and warm. Keep it warm but do not let it boil.

Whisk yolks
In a heatproof bowl (or top of a double boiler), combine the 3 egg yolks, lemon juice and Dijon mustard. Whisk until slightly thickened and pale.

Incorporate butter
Very slowly, in a thin steady stream, whisk warm melted butter into the yolk mixture until fully emulsified and thickened. If the sauce becomes too thick, whisk in 1 tsp warm water at a time to adjust consistency. Season with kosher salt and cayenne. Keep warm over the warm (not hot) water or in a thermos; do not overheat or it will separate.

Cook bacon
In a separate skillet over medium heat, cook bacon slices until crisp, about 6–8 minutes, turning as needed. Transfer to paper towels to drain and keep warm. Reserve a little bacon fat for flavor if desired.

Poach eggs
Fill a wide shallow pan with 3–4 inches of water, add 1 tsp white wine vinegar and bring to a gentle simmer. Stir water to create a gentle whirlpool. Crack each egg into a small cup and slide into the simmering water one at a time (poach 4 eggs total). Poach for 3–3.5 minutes for runny yolks, or 4–4.5 minutes for medium set. Remove eggs with a slotted spoon and drain on paper towels. Season eggs lightly with salt and pepper.

Assemble each Eggs Benny
On each toasted English muffin half place: one tomato slice, a few slices of avocado, two strips of bacon (broken or folded to fit), and then one poached egg. Spoon 2–3 tablespoons of warm hollandaise over each egg (adjust to taste). Finish with a grind of black pepper and a light dusting of smoked paprika or cayenne if desired.
