Prep avocado
Halve and pit the avocados. Scoop flesh into a bowl. Add lemon juice, 1 tsp olive oil, 1/2 tsp sea salt, 1/4 tsp black pepper and 1/4 tsp red pepper flakes. Mash with a fork until mostly smooth with some chunkiness; adjust seasoning to taste.

Prepare tomato & bread
Slice the tomato into 4 thin slices. Lightly brush both sides of the sourdough slices with a little olive oil (or butter if preferred). Toast in a skillet over medium-high heat or using a toaster until golden and crisp, about 2–3 minutes per side in a skillet or 2–3 minutes in a toaster.

Assemble toast
Spread the smashed avocado evenly over both toasted sourdough slices. Distribute crumbled goat cheese over the avocado, arrange tomato slices on top, and scatter pickled red onions. Drizzle 1 tbsp balsamic glaze across the two toasts and finish with a light pinch of sea salt and freshly cracked black pepper.

Cook eggs (recommendation: sunny-side or over-easy)
Heat a nonstick skillet over medium-low heat and add 1 tsp unsalted butter. Crack two eggs into the pan (or crack into a small bowl and slip in). Cook slowly for 2–3 minutes until whites are set but yolks still runny for sunny-side. For over-easy, cook until whites set, gently flip and cook 15–30 seconds more. Season with 1/8 tsp salt and a pinch of black pepper. Remove from heat and keep warm on top of the toast or on the plate next to the toast.

Pan-fry home fries
Heat a large skillet over medium-high heat and add 1.5 tbsp olive oil. When shimmering, add the drained potato cubes in a single layer. Cook without moving for 3–4 minutes to brown one side, then stir/flip occasionally for another 6–8 minutes until edges are crisp and cubes are golden. Add diced half onion and 1 minced garlic clove about halfway through cooking so they caramelize but don't burn. Sprinkle 1/2 tsp smoked paprika, 1/4 tsp dried thyme, 1/2 tsp salt and 1/4 tsp black pepper; toss to combine and cook 1–2 more minutes. Taste and adjust seasoning.

Finish
Turn off heat and stir in 1 tbsp chopped fresh parsley if using. Transfer home fries to the plate alongside the avocado toast and eggs.
