Prepare the Marinade
In a blender, combine the ginger, garlic, onion, tamarind paste, and chili peppers. Blend until smooth to create a marinade.

Marinate the Beef
Rub the marinade all over the beef short ribs and let them marinate for at least 2 hours, or overnight in the refrigerator for best results.

Sear the Beef
In a large pot, heat some oil over medium-high heat. Sear the marinated beef short ribs on all sides until browned. Remove and set aside.

Create the Rendang Sauce
In the same pot, add coconut milk, palm sugar, lemongrass, lime leaves, salt, and black pepper. Stir well and bring to a simmer.

Slow Braise
Return the beef short ribs to the pot, cover, and reduce the heat to low. Let it braise for 3-4 hours until the meat is tender and the sauce thickens.

Finish and Serve
Once the beef is tender, taste and adjust seasoning if needed. Serve hot with tamarind roasted caulilini and crispy compressed rice.
