Method

For the Suckling Pig

    Prepare the Suckling Pig

    Preheat the oven to 350°F (175°C). Rub the suckling pig with olive oil, salt, black pepper, rosemary, and garlic. Place on a roasting rack and roast in the oven for about 4 hours, or until the internal temperature reaches 160°F (71°C).

For the Soubise

    Cook the Onions

    In a saucepan, melt butter over medium heat. Add the onions and cook until soft and translucent, about 20 minutes. Stir in the heavy cream and simmer for another 10 minutes. Blend until smooth.

For the Charred Orange Relish

    Make the Relish

    In a bowl, combine the orange segments, red onion, olive oil, cilantro, and lime juice. Toss gently and set aside.

For the Broiled Bok Choy

    Broil the Bok Choy

    Preheat the broiler. Toss bok choy halves with sesame oil and salt. Place under the broiler for about 5 minutes until charred.

For the Pickled Peruvian Peppers

    Pickle the Peppers

    In a saucepan, combine sliced Peruvian peppers, white vinegar, sugar, and salt. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool and refrigerate.

For the Orange Ginger Coconut Milk Sauce

    Prepare the Sauce

    In a saucepan, combine coconut milk, grated ginger, orange juice, and salt. Simmer for 15 minutes, stirring occasionally.
