Mochi Ice Cream Directions

    Prepare the Ice Cream

    Scoop your ice cream into small balls and place them on a baking sheet lined with parchment paper. Freeze for at least 1 hour or until firm.

    Make the Mochi Dough

    In a microwave-safe bowl, mix sweet rice flour and sugar. Gradually add water and mix until smooth. If desired, add food coloring to achieve your preferred color.

    Cook the Mochi

    Cover the bowl with plastic wrap and microwave the mixture on high for 1 minute. Stir, then microwave for another minute. Stir again, and microwave for a final minute until the dough is thick and sticky.

    Shape the Mochi

    Dust a clean surface with cornstarch. Transfer the mochi dough to the surface and flatten it with your hands or a rolling pin to about 1/4 inch thick. Cut into squares large enough to wrap around the ice cream balls.

    Assemble the Mochi Ice Cream

    Take a square of mochi dough, place an ice cream ball in the center, and quickly wrap the mochi around the ice cream. Pinch the edges to seal. Place the finished mochi ice cream back on the parchment-lined baking sheet.

    Freeze Before Serving

    Once all the mochi ice creams are assembled, freeze them for an additional 30 minutes to firm up before serving.
