Suckling Pig Preparation

    Prepare the Pig

    Preheat the oven to 325°F (160°C). Rinse the suckling pig and pat dry. Rub the entire pig with olive oil, sea salt, black pepper, minced garlic, and fresh thyme. Place in a roasting pan.

    Roast the Pig

    Roast in the oven for about 4-5 hours, or until the internal temperature reaches 160°F (70°C) and the skin is crispy. Baste with the drippings every hour.

Celeriac Purée Preparation

    Cook the Celeriac

    Peel and chop the celeriac into cubes. Boil in salted water until tender, about 20 minutes. Drain.

    Blend the Purée

    In a blender, combine cooked celeriac, butter, heavy cream, salt, and white pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Vegetable Spring Roll Preparation

    Prepare the Filling

    In a bowl, mix together julienned carrots, shredded cabbage, bell pepper, chopped scallions, and soy sauce.

    Assemble the Spring Rolls

    Place a wrapper on a clean surface, add a spoonful of the filling, and roll tightly, sealing the edges with water.

    Fry the Spring Rolls

    Heat vegetable oil in a deep pan over medium heat. Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
