Kolak Pisang Preparation

    Prepare the Ingredients

    Peel the ripe bananas and cut them into thick slices. Set aside.

    Cook the Kolak

    In a pot, combine palm sugar, coconut milk, pandan leaves, and lemongrass. Bring to a boil, stirring until sugar dissolves.

    Add Bananas

    Add the banana slices to the pot and let simmer for about 10 minutes until the bananas are tender.

    Add Tropical Liqueur

    Stir in the tropical liqueur and cook for another 2 minutes. Remove from heat.

Coconut Lemongrass Ice Cream Preparation

    Infuse the Coconut Milk

    In a saucepan, heat coconut milk with sugar and a lemongrass stalk (bruised). Simmer for 10 minutes, then let cool. Remove lemongrass.

    Mix the Ice Cream Base

    Combine the infused coconut milk, heavy cream, vanilla extract, and salt in a bowl. Mix well.

    Chill and Churn

    Chill the mixture in the fridge for at least 2 hours, then churn in an ice cream maker according to the manufacturer's instructions.
