    Make the Gnudi

    In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg, salt, pepper, and flour. Mix until a dough forms. Fold in finely chopped kale.

    Shape the Gnudi

    Dust your hands with flour and form the mixture into small dumplings. Place them on a floured baking sheet.

    Cook the Parsnips

    In a skillet, heat olive oil over medium heat. Add the sliced parsnips and sauté until golden and caramelized, about 10-15 minutes.

    Toast the Pine Nuts

    In a separate pan, toast the pine nuts over medium heat until golden brown, stirring frequently. Set aside.

    Cook the Gnudi

    Bring a pot of salted water to a boil. Gently drop the gnudi into the boiling water and cook until they float, about 3-5 minutes. Remove and drain.

    In a saucepan, melt the unsalted butter over low heat until it begins to brown, about 5 minutes. Stir frequently.
