Cheesecake

Method

Cheesecake Preparation

  1. 1

    Prepare the crust

Preheat the oven to 325°F (160°C). In a mixing bowl, blend the cream cheese and sugar until smooth. Add in sour cream, vanilla extract, eggs one at a time, flour, and lemon zest. Mix until fully combined.

  2. 2

    Bake the cheesecake

Pour the cheesecake mixture into a greased springform pan. Bake for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let it cool inside for 1 hour. Remove from oven and refrigerate for at least 4 hours or overnight.

Fruit Compote Preparation

  1. 3

    Cook the berries

In a saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes. Remove from heat and let it cool.

Vanilla Tuile Preparation

  1. 4

    Mix the tuile batter

In a mixing bowl, whisk the egg whites and sugar until frothy. Add flour, melted butter, and vanilla extract. Mix until smooth.

  2. 5

    Bake the tuiles

Preheat the oven to 350°F (175°C). On a baking sheet lined with parchment paper, use a spoon to drop small amounts of the tuile batter. Spread them thinly into desired shapes. Bake for 8-10 minutes or until golden. Let them cool on the baking sheet.

Whipped Cream Preparation

  1. 6

    Whip the cream

In a mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Whip until soft peaks form. Keep refrigerated until ready to serve.
