Directions for Chocolate Rendezvous
- 1
Prepare the Chocolate Ganache
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Heat the heavy cream until just boiling, then pour it over the chocolate. Let it sit for a few minutes, then stir until smooth. Allow it to cool to room temperature.
- 2
Make the Chocolate Mousse
In a separate bowl, melt the milk chocolate over a double boiler or in the microwave. In another bowl, whisk the eggs and sugar until pale and fluffy. Fold the melted chocolate into the egg mixture along with the vanilla extract and a pinch of salt. Gently fold in whipped cream until no streaks remain. Chill in the refrigerator for at least 30 minutes.
- 3
Assemble the Dessert
In serving glasses, layer the lady fingers at the bottom. Spoon a layer of chocolate ganache over the lady fingers, followed by a layer of chocolate mousse. Top with fresh raspberries. Repeat the layers until the glasses are filled, finishing with a layer of mousse and a garnish of ganache and raspberries.

Chill and Serve
Refrigerate the assembled dessert for at least 2 hours to set. Serve chilled and enjoy your Chocolate Rendezvous.
