Cheddar and Crostini

Stone Fruit Jam

Method

Crostini Preparation

  1. 1

    Prepare the Baguette

Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices. Place them on a baking sheet.

  2. 2

    Add Olive Oil and Garlic

Brush each slice of baguette lightly with olive oil and rub with a halved garlic clove.

  3. 3

    Bake the Crostini

Bake the baguette slices in the preheated oven for about 10-12 minutes, or until golden and crispy.

Stone Fruit Jam Preparation

  1. 4

    Prepare the Fruit

Wash and chop the stone fruits, removing the pits. Place them in a saucepan.

  2. 5

    Cook the Jam

Add sugar and lemon juice to the saucepan. Cook over medium heat, stirring occasionally, until the fruits break down and the mixture thickens, about 20-25 minutes.

  3. 6

    Add Thyme

Stir in the fresh thyme leaves and cook for an additional 5 minutes.

  4. 7

    Cool and Store

Remove the jam from heat and let it cool. Transfer to a jar and refrigerate until ready to use.

Assembly

  1. 8

    Assemble the Dish

Top each crostini with a slice of sharp cheddar cheese and a spoonful of the stone fruit jam.

  2. 9
