Method

Mochi Dough Preparation

  1. 1

    Combine Dry Ingredients

In a mixing bowl, combine the sweet rice flour and granulated sugar. Mix well to ensure even distribution of the sugar.

  2. 2

    Add Water

Gradually add the water to the dry ingredients while stirring continuously until the mixture is smooth and free of lumps.

  3. 3

    Microwave the Mixture

Transfer the mixture to a microwave-safe bowl. Cover with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, then stir. Repeat this process two more times (for a total of 3 minutes) until the dough becomes sticky and translucent.

  4. 4

    Add Cornstarch

Once cooked, sprinkle cornstarch over the mochi dough to prevent sticking. Let it cool slightly before handling.

  5. 5

    Color the Dough (Optional)

If desired, add food coloring to the dough and knead until the color is evenly distributed.

Assembly

  1. 6

    Prepare Ice Cream Balls

Scoop the ice cream into small balls (about 1-2 tablespoons each) and place them on a parchment-lined baking sheet. Freeze for at least 30 minutes until firm.

  2. 7

    Shape the Mochi

Dust your work surface with cornstarch. Take a portion of the mochi dough and flatten it into a circle about 1/4 inch thick. Use enough cornstarch to prevent sticking.

  3. 8

    Wrap the Ice Cream

Place a frozen ice cream ball in the center of the flattened mochi circle. Carefully fold the edges of the mochi over the ice cream, pinching to seal. Make sure the ice cream is completely enclosed.

  4. 9

    Repeat

Repeat the process with the remaining mochi dough and ice cream balls. Dust the finished mochi with cornstarch to prevent sticking.

  5. 10

    Freeze the Mochi

Place the mochi ice cream balls back on the parchment-lined baking sheet and freeze for at least 1 hour before serving.
