Panna Cotta Preparation

Prepare the Gelatin
In a small bowl, sprinkle the gelatin over 50 ml of cold water and let it sit for about 5 minutes to bloom.

Heat the Coconut Mixture
In a saucepan, combine the coconut milk, heavy cream, and granulated sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Heat the mixture over medium heat until it just begins to simmer, stirring frequently.

Combine Gelatin and Coconut Mixture
Remove the saucepan from the heat. Take out the vanilla pod and discard it. Stir in the bloomed gelatin until fully dissolved.

Chill the Panna Cotta
Pour the mixture into serving glasses or molds. Refrigerate for at least 4 hours, or until set.
