Method

Steak Preparation

  1. 1

    Season the Steak

Pat the ribeye steaks dry with paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, and fresh rosemary. Rub the mixture all over the steaks. Drizzle with olive oil and let them sit at room temperature for 30 minutes.

  2. 2

    Cook the Steak

Heat a cast-iron skillet or grill over high heat. Once hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer for accuracy; aim for 130°F (54°C) for medium-rare.

  3. 3

    Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.

Fries Preparation

  1. 4

    Prep the Potatoes

Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

  2. 5

    Heat the Oil

In a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

  3. 6

    Fry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels. Carefully add a portion of the fries to the hot oil. Fry them in batches, for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  4. 7

    Season the Fries

Sprinkle the hot fries with salt immediately after frying. Serve hot alongside the steak.
