Dough Preparation

    Mix the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Add the oil and mix until the mixture resembles breadcrumbs.

    Knead the Dough

    Gradually add water and knead the mixture into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a pan, heat a little oil over medium heat and add cumin seeds. Once they crackle, add the mashed potatoes and peas.

    Spice it Up

    Add coriander powder, garam masala, green chili, cilantro, salt, and lemon juice. Mix well and cook for a few minutes until heated through. Remove from heat and let it cool.

Assembling and Frying

    Roll the Dough

    Divide the dough into small balls. Roll each ball into a thin oval or circle (about 6 inches in diameter).

    Form the Samosas

    Cut the rolled dough in half. Take one half, form a cone by bringing the straight edge together, and seal it with a little water. Fill the cone with the potato-pea filling and seal the open edge to form a triangular shape.

    Heat the Oil

    In a deep frying pan, heat the oil over medium heat until hot.

    Fry the Samosas

    Carefully slide the samosas into the hot oil. Fry until they turn golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Serving

    Serve with Chutney

    Serve the hot samosas with tamarind chutney on the side.
