Marinate the Lamb
In a large bowl, combine the cubed lamb with salt, turmeric, red chili powder, and garam masala. Mix well, cover, and let it marinate for at least 1 hour or overnight in the refrigerator for better flavor.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.

Combine with Lamb and Tomatoes
Add the marinated lamb to the pot and brown it on all sides. Then add the diced tomatoes and stir well to combine.

Add Potatoes and Simmer
Add the cubed potatoes, black pepper, coriander powder, and enough water to cover the meat and potatoes. Bring to a boil, then reduce the heat, cover, and let it simmer for about 1.5 hours or until the lamb is tender.

Adjust Seasoning
Taste and adjust the salt and chili powder as needed. If you prefer a thicker sauce, remove the lid and cook for an additional 10-15 minutes.
