Prepare the Calamari

In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create the dry coating.

Prepare the Wet Mixture

In another bowl, whisk together the eggs and milk until well combined.

Coat the Calamari

Dip each calamari ring first into the wet mixture, allowing excess to drip off, then coat it in the dry mixture. Set aside on a plate.

Heat the Oil

In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari

Carefully add the coated calamari rings in batches to the hot oil, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté the Garlic

In a saucepan over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Add Tomatoes and Seasoning

Pour in the crushed tomatoes, oregano, salt, sugar, and black pepper. Stir well to combine.

Simmer the Sauce

Bring the sauce to a simmer and reduce heat to low. Allow it to simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce

Stir in the chopped fresh basil just before serving. Adjust seasoning if needed.
