Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Prepare the Wet Mixture
In another bowl, whisk together the eggs and buttermilk until well combined.

Bread the Calamari
Dip each calamari ring into the wet mixture, then dredge in the flour mixture, ensuring they are fully coated.
Frying Calamari

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari rings in batches, cooking for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, and black pepper. Simmer for 20 minutes, stirring occasionally.
