Peel and Cut Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Place them in a large bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for precise temperature control.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. Ensure they are as dry as possible to avoid oil splatter during frying.

Fry the Potatoes
Carefully add a batch of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry them for about 5-7 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

While the fries are still hot, sprinkle them with salt, paprika, and garlic powder to taste. Toss them gently to ensure even coating.
