Prepare the Marinade
In a medium bowl, combine soy sauce, coconut milk, brown sugar, lime juice, minced garlic, grated ginger, salt, and black pepper. Mix well until the sugar dissolves.
Marinate the Chicken
Cut the chicken breast into strips or cubes and place them in the marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. This will help keep the chicken moist during grilling.
Thread the Chicken
Once marinated, thread the chicken pieces onto the skewers, leaving some space between each piece for even cooking.

Combine Ingredients
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, red chili flakes, and minced garlic.
Cook the Sauce
Stir the mixture continuously until smooth and heated through. If the sauce is too thick, add water a tablespoon at a time until the desired consistency is reached.
Serve the Sauce
Remove from heat and transfer to a serving bowl. Serve warm or at room temperature alongside the grilled chicken skewers.
