    Prepare the Ingredients

    Begin by cutting the chicken thighs into bite-sized pieces. Finely chop the onion, mince the garlic, and grate the ginger.

    Sauté the Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent (about 5 minutes). Add the garlic and ginger, and sauté for another 2 minutes until fragrant.

    Cook the Chicken

    Add the chicken pieces to the pot and cook for about 5-7 minutes, stirring frequently, until the chicken is browned on all sides.

    Add the Spices

    Stir in the curry powder, turmeric powder, red chili powder, and salt. Cook for another 2 minutes, allowing the spices to coat the chicken.

    Add Tomato and Coconut Milk

    Pour in the tomato puree and coconut milk. Stir well to combine all ingredients.

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the chicken is cooked through and tender.

Basmati Rice

    Rinse the basmati rice under cold running water until the water runs clear. This helps remove excess starch.

    In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.

    Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
