Method
Cooking the Pasta
Boil Water
In a large pot, bring salted water to a boil over high heat.
Cook Fettuccine
Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
Drain and Set Aside
Once cooked, drain the pasta and set it aside, reserving a small amount of pasta water for later use.
Grilling the Chicken
Prepare Chicken
Season the chicken breasts with olive oil, salt, and black pepper on both sides.
Grill Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and juices run clear.
Slice Chicken
Once cooked, remove the chicken from the grill and let it rest for a few minutes. Then slice it into strips.
Making the Alfredo Sauce
Add Garlic
Stir in the minced garlic and sauté for about 1 minute until fragrant.
Add Cream and Cheese
Slowly pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
Season Sauce
Add nutmeg, salt, and black pepper to taste. If the sauce is too thick, you can add a little reserved pasta water to reach desired consistency.
Combining and Serving
Combine Pasta and Sauce
Add the drained fettuccine pasta to the Alfredo sauce, tossing to coat evenly.
Serve
Plate the pasta and top with sliced grilled chicken. Garnish with chopped parsley before serving.
