Crust Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

Form Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake the crust in the preheated oven for 10 minutes, then remove and let cool.
Cheesecake Filling Preparation

Beat Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add the granulated sugar and beat until fully incorporated. Then add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Add Flour and Salt
Sift in the all-purpose flour and salt, gently folding them into the batter until just combined.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan and smooth the top with a spatula.

Bake Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight.
Berry Compote Preparation

Combine Ingredients
In a medium saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook Compote
Cook over medium heat for about 10-15 minutes, stirring occasionally until the berries have released their juices and the mixture has thickened slightly.

Cool Compote
Remove from heat and let the compote cool to room temperature. It can be refrigerated until ready to serve.
Serving

Serve Cheesecake
Remove the cheesecake from the springform pan and slice into wedges. Serve topped with the berry compote.
