Preparation of Bunny Chow

    Prepare the Bread

    Using a serrated knife, carefully slice off the top of the loaf of bread to create a lid. Hollow out the inside of the loaf, leaving about 1 inch of bread on the sides and bottom. Set aside the bread you removed for later use.

    Make the Curry Filling

    In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Add Spices and Tomatoes

    Sprinkle in the curry powder and stir well to coat the onions. Pour in the canned tomatoes and cook for 5 minutes, allowing the mixture to bubble and thicken.

    Add Chickpeas and Broth

    Add the drained chickpeas and vegetable broth to the mixture, stirring to combine. Season with salt and pepper. Simmer for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.

    Assemble the Bunny Chow

    Spoon the curry filling into the hollowed-out bread loaf until it's generously filled. Place the lid on top of the bread.

    Serve

    Garnish the Bunny Chow with chopped fresh cilantro and serve immediately with the reserved bread pieces on the side for dipping.
