Prepare the Ravioli

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the cheese ravioli and cook according to package instructions, usually about 4-5 minutes, until they float to the top. Drain and set aside.

Cook Shrimp and Vegetables

    Sauté Shrimp and Onions

    In a large skillet, heat olive oil over medium heat. Add the pearl onions and sauté for about 3-4 minutes until they begin to soften. Add the shrimp, season with salt and black pepper, and cook until the shrimp are pink and opaque, about 3-4 minutes. Stir in the chopped roasted tomatoes and cook for an additional minute. Remove from heat and set aside.

Prepare Lobster Cream Sauce

    Make the Sauce

    In the same skillet, melt the butter over medium heat. Add the finely chopped shallot and sauté until translucent, about 2-3 minutes. Pour in the lobster stock and let it simmer for about 5 minutes to reduce slightly. Stir in the heavy cream and bring to a gentle simmer. Add the chopped tarragon, salt, and black pepper to taste. Cook for another 2-3 minutes until the sauce thickens slightly.

Combine and Serve

    Combine Everything

    Add the cooked ravioli to the skillet with the lobster cream sauce. Gently toss to coat the ravioli in the sauce. Then, add the sautéed shrimp and vegetables, mixing gently to combine.

    Serve the shrimp ravioli on plates, garnished with microgreens for a fresh touch.
