Prepare the Pasta
In a large pot, bring salted water to a boil. Add the linguini pasta and cook according to package instructions until al dente. Drain and set aside.

Roast the Tomatoes
If you haven't prepared the oven roasted tomatoes yet, preheat your oven to 375°F (190°C). Place halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25-30 minutes until they are soft and slightly caramelized.

Sauté Garlic and Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the tiger shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.

Add Spinach and Sauce
Stir in the fresh spinach and cook until wilted. Pour in the sweet vermouth, add chopped sage, and season with salt and black pepper. Allow the sauce to simmer for about 5 minutes to meld the flavors.

Combine with Pasta
Add the cooked linguini and oven roasted tomatoes to the skillet. Toss everything together gently to coat the pasta in the sauce. Cook for an additional minute until heated through.
Serving

Divide the shrimp linguini among plates, garnishing with extra sage if desired. Serve immediately and enjoy your delicious dish!
