Method

Preparation

  1. 1

    Prepare the Shrimp

Pat the shrimp dry with paper towels and season with salt and black pepper. Set aside.

  2. 2

    Prepare the Baguette

Slice the baguette into 1-inch thick pieces and set aside.

  3. 3

    Slice the Fresno Chili

Slice the Fresno chili into thin rings, discarding the seeds if you prefer less heat.

Cooking

  1. 4

    Toast the Baguette

In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the baguette slices and toast until golden brown on both sides, about 2-3 minutes per side. Remove and set aside.

  2. 5

    Cook the Shrimp

In the same skillet, add the remaining tablespoon of olive oil. Once the oil is hot, add the seasoned shrimp and cook for 2-3 minutes on each side until they are pink and opaque.

  3. 6

    Add Fresno Chili

During the last minute of cooking the shrimp, add the sliced Fresno chili to the skillet and toss to combine.

  4. 7

    Deglaze the Pan

Pour in the dry sherry and cook for an additional 1-2 minutes, allowing it to reduce slightly and coat the shrimp.

  5. 8

    Finish with Chili Butter

Add the stick of chili butter to the skillet and stir until melted, ensuring the shrimp are well coated.

Serving

  1. 9

    Plate the Dish

Serve the shrimp and Fresno chili mixture over the toasted baguette slices. Drizzle with any remaining sauce from the skillet.

  2. 10

    Garnish

Optionally, garnish with additional sliced Fresno chili and fresh herbs if desired.
