Salad Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet, drain on paper towels, and chop into bite-sized pieces.

    Prepare the Potatoes

    If using pre-cooked crispy potatoes, simply chop them into smaller pieces. If making from scratch, dice potatoes and fry until golden and crispy. Drain on paper towels.

    Assemble the Salad

    In a large salad bowl, combine the artisan greens, dried cranberries, crispy potatoes, chopped bacon, spiced walnuts, gorgonzola, and feta cheese. Toss gently to combine.

Vinaigrette Preparation

    Mix the Vinaigrette

    In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, dried sage, salt, and black pepper until well combined and smooth.
