Method

Preparation of Cauliflower

    Preheat the Oven

    Preheat your wood-fire oven to about 400°F (200°C) for roasting.

    Prepare Cauliflower

    Wash and cut the cauliflower into florets. Pat them dry with a paper towel.

    Season Cauliflower

    In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated.

Cheese Blend Preparation

    Mix Cheese Blend

    In a separate bowl, mix together the grated Parmesan, shredded mozzarella, and softened cream cheese until well combined.

Making Pesto

    Blend Pesto Ingredients

    In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, olive oil, grated Parmesan, and salt. Blend until smooth. Adjust consistency with more olive oil if necessary.

Making Green Goddess Dressing

    Combine Dressing Ingredients

    In a bowl, mix Greek yogurt, chopped parsley, chopped chives, minced garlic, lemon juice, salt, and black pepper. Stir well until smooth and creamy.

Roasting Cauliflower

    Roast the Cauliflower

    Spread the seasoned cauliflower florets on a baking sheet. Roast in the preheated oven for about 25 minutes or until golden brown and tender.

    Add Cheese Blend

    Remove the cauliflower from the oven, sprinkle the cheese blend evenly over the cauliflower, and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.

Serving

    Plate and Serve

    Once the cauliflower is done, drizzle with the fresh basil pesto and serve with green goddess dressing on the side.
