Prepare the Brownie Base

    Melt the Butter

    In a medium saucepan over low heat, melt the unsalted butter. Once melted, remove from heat and let cool slightly.

    Mix the Ingredients

    In a mixing bowl, combine melted butter, granulated sugar, and eggs. Whisk until smooth. Add cocoa powder, flour, salt, and vanilla extract. Mix until just combined.

    Bake the Brownie

    Pour the brownie mixture into a greased 9x9 inch baking pan. Bake at 350°F (175°C) for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.

Prepare the Phyllo Layers

    Layer the Phyllo

    Preheat the oven to 375°F (190°C). On a clean surface, unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

    Assemble the Phyllo

    Layer 5 sheets of phyllo dough, brushing each sheet with melted butter before adding the next. Cut the layered phyllo into squares large enough to fit the brownie squares.

    Add the Brownie

    Place a brownie square in the center of each phyllo square. Gather the corners of the phyllo and twist to seal the brownie inside. Brush the tops with more melted butter.

    Bake the Phyllo Brownies

    Place the phyllo-wrapped brownies on a baking sheet and bake for 15-20 minutes until golden brown and crispy.

Prepare the Creme Anglaise

    Heat the Cream

    In a saucepan, heat the heavy cream and the split vanilla bean over medium heat until it begins to simmer. Remove from heat and let sit for 15 minutes.

    Whisk Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks and granulated sugar until pale and thick.

    Combine and Cook

    Gradually add the warm cream to the egg yolk mixture, whisking continuously. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon. Remove from heat and strain through a fine sieve to remove the vanilla bean.

Serving

    Plate the Dish

    Place a phyllo brownie on a plate. Drizzle crème anglaise around the brownie and top with a scoop of vanilla bean ice cream.
