Pasta Preparation

    Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.

    Stir in the minced garlic and cook for another minute. Then add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 8-10 minutes.

    Once the beef is browned, add the crushed tomatoes, tomato paste, and red wine. Stir to combine.

    Add the dried oregano, salt, and black pepper. Bring the sauce to a simmer and let it cook for about 20-25 minutes, stirring occasionally, until it thickens slightly.
