Method
Preparing the Custard Base

Step 1: Heat the Cream
In a medium saucepan, combine the heavy cream and half of the granulated sugar over medium heat. Split the Tahitian vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Heat until the mixture is just about to boil, then remove from heat.

Step 2: Whisk the Egg Yolks
In a large bowl, whisk together the egg yolks, the remaining granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

Step 3: Temper the Egg Yolks
Slowly pour the hot cream mixture into the egg yolks while continuously whisking to prevent the yolks from scrambling. Remove the vanilla pod.

Step 4: Strain the Mixture
Pour the custard mixture through a fine-mesh sieve into another bowl to ensure a smooth texture.
Baking the Custards

Preheat your oven to 325°F (160°C).

Step 7: Create a Water Bath
Carefully add hot water to the baking dish, making sure it reaches halfway up the sides of the ramekins.

Bake in the preheated oven for 30-35 minutes, or until the custards are set around the edges but still slightly jiggly in the center. Remove from the oven and let cool to room temperature.

Cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.
Caramelizing the Sugar

Step 10: Prepare for Caramelizing
Once the custards are chilled, sprinkle an even layer of granulated sugar over the top of each custard.

Using a kitchen torch, carefully melt the sugar until it forms a golden-brown crust. Alternatively, place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.
Serving

Step 12: Garnish and Serve
Let the caramelized sugar cool for a few minutes until hard. Serve the crème brûlée with a side of mixed seasonal berries on top or on the side.
