Prepare the Crust

Mix Crust Ingredients
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Preheat your oven to 350°F (175°C) and bake the crust for about 10 minutes. Remove from oven and let it cool.
Prepare the Filling

Blend Filling Ingredients
In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream, mixing until well incorporated. Scrape the sides of the bowl as needed.

Incorporate Vanilla and Eggs
Add the vanilla extract and eggs, one at a time, mixing on low speed until just combined. Be careful not to overmix.

Pour into Crust
Pour the filling over the cooled crust, spreading it evenly.
Bake the Cheesecake

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then, remove it and let it cool completely at room temperature before refrigerating for at least 4 hours, or overnight.

Before serving, drizzle with your choice of chocolate sauce, caramel sauce, or raspberry sauce.
