Method

Filling Preparation

  1. 1

    Prepare the Berries

In a large mixing bowl, combine the mixed seasonal berries, granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently toss the ingredients until the berries are well coated. Let the mixture sit for about 15 minutes to allow the sugar to draw out the juices from the berries.

Cobbler Topping Preparation

  1. 2

    Make the Cobbler Topping

In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. In another bowl, melt the unsalted butter and then mix it with the milk. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

Assembling and Baking

  1. 3

    Combine and Bake

Preheat the oven to 350°F (175°C). Pour the berry mixture into a greased 9x13 inch baking dish, spreading it evenly. Spoon the cobbler topping over the berries, ensuring it covers them evenly. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the cobbler comes out clean.

Serving

  1. 4

    Serve the Cobbler

Remove the cobbler from the oven and let it cool for about 10 minutes. Serve warm with a generous scoop of vanilla bean ice cream on top.
