Preparation of Crispy Potatoes

Boil Potatoes
Place baby potatoes in a pot of salted water and bring to a boil. Cook for 10-15 minutes or until fork-tender. Drain and let cool slightly.

Roast Potatoes
Preheat the oven to 200°C (400°F). Cut the boiled potatoes in half, toss them with olive oil, fresh rosemary, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy and golden brown.

Prepare the Grill
Preheat your wood grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

Season the Atlantic salmon fillets with salt and black pepper on both sides.

Sauté Brussels Sprouts
In a skillet, add a tablespoon of olive oil over medium heat. Add halved Brussels sprouts and sauté for about 5-7 minutes until tender and slightly charred.

On each plate, place a serving of crispy potatoes, sautéed Brussels sprouts, smoked artichokes, and a sprinkle of sun-dried tomatoes. Top with the grilled salmon and drizzle with romesco sauce before serving.
