Inspect and clean

Rinse oysters under cold running water to remove sand and debris. Discard any with cracked or open shells that do not close when tapped.

Chill (optional)

Place cleaned oysters on a bed of ice to keep them cold while you prepare the steaming setup. This helps retain plumpness and flavor.

Prepare aromatics

Peel and thinly slice the ginger into matchsticks (about 2 tbs). Slice the scallion green parts into 2–3 inch lengths. Crush or thinly slice the garlic.

Make steaming broth

In a wide skillet with a tight-fitting lid or a wok with a steamer rack, combine 500 ml water and 60 ml white wine (if using). Add the ginger, scallion halves, and garlic. Add 0.25 tsp sea salt. Bring the liquid to a gentle rolling boil over medium-high heat.

Arrange oysters

Carefully place oysters cup-side down (to keep liquid inside the shell) on the steamer rack or directly in a single layer in the skillet, with the hinge toward the center so they sit securely. Leave space between oysters for steam circulation.

Steam oysters

Cover and steam over high heat until the oysters just begin to open, about 5–7 minutes depending on size. You will hear a slight pop and see the edges of the shells separating. Do not over-steam; once shells open, cook no more than 1 additional minute.

Check doneness

Using tongs, remove one oyster and carefully open fully to check the meat. The oyster should be plump, opaque at the edges, and still slightly translucent in the center. Discard any that did not open during steaming.

Sauce & finishing

Prepare finishing sauce

While oysters steam, combine 2 tbs light soy sauce, 1 tsp sesame oil, 1 tsp lime or lemon juice, 1 tsp chopped fresh red chili or 1 tsp chili flakes, 1 tbs softened butter (optional), and 2 tbs chopped cilantro in a small bowl. Stir until the butter melts and the mixture is emulsified. Taste and adjust salt (add up to 0.25 tsp more if needed) and pepper.

Dress oysters

As each oyster opens, use tongs to transfer it to a serving platter, keeping it in its bottom shell. Spoon about 1 teaspoon of the finishing sauce onto each hot oyster, allowing the flavors to warm and mingle.

Garnish and serve

Finish with a few additional thin slices of fresh ginger or a sprinkle of chopped scallion and cilantro if desired. Serve immediately while hot with lemon or lime wedges and extra sauce on the side.
