Method
Broth
Build broth
Pour in 6 cups chicken stock and 1 cup dashi. Bring to a gentle simmer. Reduce heat to low and simmer uncovered for 20 minutes to infuse flavors, skimming any foam or surface impurities occasionally.
Finish miso base
Temper the miso: scoop 4 tbsp white miso and 2 tbsp red miso into a small bowl, add 1/2 cup hot broth and whisk until smooth. Stir tempered miso into the simmering pot along with 1 tbsp soy sauce and 1 tbsp mirin. Keep broth at a very gentle simmer (do not boil vigorously once miso is added) and simmer 5 more minutes. Taste and adjust seasoning with up to 1/2 tsp salt if needed.
Spicy Chili Blend
Combine 2 tbsp chili crisp, 1 tsp toasted sesame seeds, 1 tsp ground shichimi togarashi, 1 tsp gochugaru, 1 tsp crushed red pepper flakes and 1 tsp sambal oelek in a small bowl. Stir to make a coarse paste. Reserve 1 tbsp of this blend per serving to drizzle on the finished bowls; fold the remainder into the broth (or keep on the side for diners to add more heat).
Chicken & Aromatics
Prepare chicken
Pat 1 lb chicken thighs dry and season both sides with 1 tsp kosher salt and 1 tsp ground black pepper.
Sear and finish
Heat 1 tbsp neutral oil in a skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden. Reduce heat to medium, add 1 tsp mirin, cover and cook 4–6 minutes until internal temperature reaches 165°F (74°C). Remove from pan and let rest 5 minutes before slicing thinly across the grain. Reserve pan juices; you may add a splash to the broth for extra flavor.
Noodles & Eggs
Soft-boiled eggs (ajitsuke-style)
Bring a pot of water to a rolling boil. Gently lower 4 large eggs into the boiling water and cook for 6 minutes for jammy yolks. While eggs cook, prepare an ice bath with cold water and 1 tsp rice vinegar. When time is up, transfer eggs to the ice bath for 5 minutes. Peel carefully. (Optional quick marinade: combine 1/4 cup soy sauce, 1/4 cup water and 1 tbsp mirin; submerge peeled eggs in marinade for 30–60 minutes for extra flavor.)
Cook noodles
Bring a separate pot of water to a rolling boil. Add ramen noodles and cook according to package instructions (usually 2–4 minutes for fresh, 4–5 minutes for dried) until al dente. Drain quickly and rinse briefly under hot water to remove excess starch and loosen noodles; toss with a drizzle of sesame oil if desired to prevent sticking.

Prepare vegetables while broth simmers: blanch 1 cup bean sprouts in boiling water for 30 seconds, then shock in ice water; drain. Lightly wilt 1 cup baby spinach or blanched bok choy in a hot skillet with a quick splash of oil for 30–45 seconds. Sauté 4 shiitake mushrooms in a little oil until softened and seasoned with a pinch of salt. Keep toppings warm until serving.
Assembly & Garnish
Top each bowl with sliced scallion greens, nori strip, toasted sesame seeds, a light drizzle of chili oil, and optional pickled ginger. Serve immediately so eggs remain jammy and broth hot.
