Clean and pat dry
Rinse the shrimp briefly under cold water. Pat them dry thoroughly with paper towels. Keeping the shells on helps lock flavor — only the heads have been removed per the dish title.
Season and marinate
In a large bowl, combine the shrimp, kosher salt, black pepper, minced garlic, lemon juice, and olive oil. Toss with your hands until each shrimp is lightly coated. Let sit at room temperature for 10–15 minutes to absorb flavors.

Preheat pan
Heat a large heavy skillet (cast iron preferred) over medium-high heat until hot, about 2 minutes. Add 1 tablespoon olive oil if your skillet is not nonstick; otherwise the existing marinade oil will suffice.
Sear the shrimp
Add the shrimp in a single layer in the hot skillet. Cook without moving for 1.5–2 minutes until the shells start to turn pink-orange and char slightly. Flip each shrimp and cook the other side for 1–1.5 minutes. Total cook time per side is short — shrimp are done when opaque and slightly firm (internal temperature ~120–130°F). Do not overcook.
Make the pan sauce
Reduce heat to medium. Push the shrimp to the edges, add the butter to the center of the pan and let it melt. Stir in smoked paprika and red pepper flakes, scraping up any browned bits from the pan with a wooden spoon. Spoon the melted, seasoned butter over the shrimp for 30–45 seconds to glaze.
Serve
Transfer shrimp to a shallow bowl or platter. Serve immediately with crusty bread or steamed rice to soak up the pan sauce and extra lemon wedges on the side. Encourage guests to use their hands — shells on but heads off makes for easy, flavorful eating.
