Tacos (makes 2 tacos)
Method
Tacos (makes 2 tacos)
Prepare chicken
If using refrigerated or leftover cooked breaded chicken tender (about 1 piece), warm it through. Preheat oven to 350°F (175°C) and place the chicken on a small baking sheet for 8–10 minutes until heated through, or microwave on a microwave-safe plate for 45–60 seconds until hot. If the chicken is larger than desired for a kid's taco, slice it into 2 equal-length strips so each taco gets one strip.
Warm tortillas
Warm the 2 flour tortillas so they are pliable. To warm on the stovetop, heat a dry skillet over medium for 20–30 seconds per side. To microwave, wrap tortillas in a damp paper towel and microwave 15–20 seconds. Optionally rub each tortilla with 1/2 tsp softened butter after warming.
Assemble tacos
Place each warmed tortilla on a plate. Put half of the sliced/warmed chicken strip onto each tortilla (one strip per taco). Sprinkle approximately 0.5 oz shredded cheddar cheese evenly over each taco (total 1 oz). The warmth from the chicken and tortilla will slightly melt the cheese.
Serve
Fold each tortilla gently around the filling and serve immediately with 1 tsp mild ranch or ketchup per taco on the side for dipping, if desired. Let the tacos cool for a minute before giving to a child to avoid burns.
