Curry Sauce
Heat spices (if using whole)
Heat 3 tbsp oil or ghee in a large skillet or saucepan over medium heat. If using whole garam masala (bay leaf, cinnamon, cardamom), add them now and fry 20–30 seconds until fragrant.
Add tomatoes and ground spices
Add the chopped or crushed tomato and cook until it breaks down and oil begins to separate from the mixture, about 4–6 minutes. Stir in ground coriander, ground cumin, turmeric, red chili powder, and salt. Cook 1–2 minutes to roast the spices lightly.
Build the sauce
Pour in 1 cup water or stock and bring to a simmer. Reduce heat and let the sauce cook gently for 5 minutes to thicken slightly. If using, stir in 1 tbsp coconut milk or cream now for a richer, creamier sauce.
Adjust seasoning
Taste the sauce and adjust salt and chili as needed. Stir in 1 tsp garam masala and 1 tsp lemon juice; simmer 1 minute to blend flavors.
Finishing & Garnish
Turn off heat. Sprinkle chopped fresh cilantro over the curry. If desired, drizzle an extra 1 tsp oil or a bit more coconut milk for gloss. Remove and discard any whole spice pieces used earlier (bay leaf, cinnamon, cardamom pods).
Serve
Serve the egg curry hot with steamed rice, roti, naan, or bread. Leftovers keep in the refrigerator for up to 2 days; reheat gently on the stove to avoid overcooking the eggs.
