Prep the wings
Pat the wings dry very well with paper towels. If wings are whole, separate at the joint into drumette and flat (optional) and discard wing tips or save for stock. Drying helps skin crisp.
Season
Place the dried wings in a large bowl. Sprinkle with kosher salt, black pepper, garlic powder, paprika and baking powder. Toss thoroughly so each wing is evenly coated. The baking powder helps skin crisp in the oven (not a leavening effect).
Arrange for roasting
Preheat oven to 230°C (450°F). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange wings in a single layer on the rack leaving space between pieces for air circulation.
Roast
Roast in the preheated oven for 25 minutes. Flip each wing and roast for an additional 12–18 minutes until skin is deeply golden and crisp and internal temperature reaches 74°C (165°F). For extra crispness, broil 1–2 minutes at the end—watch closely to prevent burning.
Sauce & Finish
Make the sauce
While the wings roast, melt the unsalted butter in a small saucepan over low heat or in a microwave-safe bowl. Stir in the hot sauce, honey, apple cider vinegar and lemon juice. Warm until combined and glossy, taste and adjust: add a pinch more honey if too spicy or a few drops more vinegar for tang.
Toss wings in sauce
When wings are done, transfer them to a clean large bowl. Pour the warm sauce over the wings and toss gently but thoroughly so every piece is coated. If you prefer saucier wings, reserve 1–2 tablespoons of sauce to serve on the side.
Garnish
Sprinkle chopped fresh parsley and optional sesame seeds over the sauced wings for color and aroma.
For Serving
Arrange wings on a platter with celery and carrot sticks and a small bowl of ranch or blue cheese dressing for dipping. Serve immediately while hot and crispy.
