Marinate chicken
Combine chicken pieces with soy sauce, rice vinegar, cornstarch, grated garlic, and black pepper in a bowl. Toss to coat and let marinate 10–15 minutes while you start the broth.
If making ajitsuke tamago (marinated soft-boiled eggs): bring a small pot of water to boil, gently lower eggs and cook 6–7 minutes for jammy yolks. Transfer to an ice bath. Peel when cool and marinate in a mixture of 2 tbsp soy sauce + 2 tbsp mirin + 2 tbsp water for at least 30 minutes (or up to overnight).
Broth & Curry Base
Add the minced garlic and grated ginger and cook 30–45 seconds until fragrant, taking care not to burn.
Stir in the mild curry powder and grated/chopped Japanese curry roux. Cook 1–2 minutes to bloom the spices and dissolve the roux into the aromatics. If the roux is very thick, add 1–2 tablespoons of the stock to help dissolve it and create a paste.
Pour in the chicken stock and optional bone broth, stirring to combine and dissolve any roux paste. Add soy sauce, mirin, sake (if using), miso paste (dissolve in a little warm stock first), sugar, and chicken bouillon paste if using. Bring to a gentle simmer.
Let the broth simmer gently for 15–20 minutes, partially covered, to allow flavors to meld and the curry to infuse the stock. Taste and adjust seasoning with salt and pepper. If you want a slightly thicker, silkier broth similar to tonkotsu mouthfeel, simmer uncovered for a few extra minutes to reduce 5–10% and finish with toasted sesame oil.
Cook Protein & Vegetables
Blanch the spinach or bok choy and bean sprouts in boiling water for 20–30 seconds until bright and just wilted. Drain and set aside.
Noodles & Assembly
Bring a separate pot of water to a rolling boil. Cook ramen noodles according to package instructions until just tender (fresh 2–3 minutes; dried 3–4 minutes). Reserve 1/2 cup of the noodle cooking water, then drain noodles well.
Heat the broth briefly to a gentle simmer. Adjust seasoning one final time. If the broth separated or is too thin, whisk in a small amount (1–2 tsp) of cornstarch slurry (1 tsp cornstarch + 1 tbsp cold water) or add a little reserved noodle water to marry the broth and create a glossy finish.
Divide cooked noodles between two bowls. Ladle the hot curry-tonkotsu broth over the noodles (about 3 cups broth per bowl). Arrange seared chicken, sautéed mushrooms, blanched greens, bean sprouts, corn, and halved soft eggs on top.
Garnish with scallions, toasted sesame seeds, nori strips, pickled ginger, a drizzle of chili oil if using, and cilantro or mitsuba. Serve immediately with lime wedge on the side.
