Slice and season
Preheat the oven to 400°F (200°C). Slice the baguette diagonally into 12–14 slices about 1/2-inch thick. Arrange slices in a single layer on a baking sheet.
Toast in the preheated oven 8–10 minutes, flipping once halfway through, until edges are golden and crisp. Remove and let cool slightly so tops are firm but still warm.
Truffle whipped ricotta
Combine and whip
In a medium bowl, add 2 cups whole-milk ricotta, 1/4 cup mascarpone, and 1/4 cup grated Parmesan. Using an electric hand mixer or a stand mixer fitted with the whisk attachment, whip on medium speed for 1–2 minutes until smooth and slightly airy.
Add 1 teaspoon truffle oil, 1 teaspoon fresh lemon juice, 1/2 teaspoon fine sea salt, and 1/4 teaspoon freshly ground black pepper. Beat another 20–30 seconds until fully incorporated. If mixture feels too thick for spreading, add up to 2 tablespoons cold water, 1 tablespoon at a time, and mix until you reach a light, spreadable consistency.
Taste and adjust seasoning: add a pinch more salt or 1/4 teaspoon extra truffle oil if desired, but avoid overpowering the ricotta's delicate flavor.

Warm 1/2 cup fig jam slightly in a small saucepan or microwave (15–20 seconds) so it is spreadable but not runny. If using plain honey, mix 3 tablespoons honey with a pinch (about 1/8 tsp) of red pepper flakes and warm gently to infuse.
Lay the toasted baguette slices on a serving platter. Using a spoon or an offset spatula, spread about 1 heaping tablespoon of the truffle whipped ricotta onto each slice (roughly 12–14 slices, distributing evenly).
On half of the crostini (or arrange as you like), place about 1 teaspoon of warm fig jam on top of the ricotta. For variety, you can alternatively smear jam directly onto bread before ricotta, but stacking ricotta then jam preserves texture contrast.
Finish with a light drizzle (about 1 tablespoon total) of extra-virgin olive oil and a pinch of flaky sea salt (use the 1/2 teaspoon) over the assembled bruschette.
Serve immediately while toast is still slightly warm so the ricotta is creamy and contrasts with the jam and honey. Leftovers: store ricotta and jam separately in airtight containers in refrigerator up to 2 days; assemble just before serving to keep bread crisp.
