Spring Rolls

Prepare vegetables
Thinly slice cabbage and carrots into fine shreds. Finely slice shiitake mushrooms and scallions. Mince garlic and grate or finely mince ginger. Rinse and drain bean sprouts well.

Cook filling
Heat 2 tbs vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger and stir-fry 15–20 seconds until fragrant. Add mushrooms and cook 1–2 minutes until softened. Add shredded cabbage and carrots and stir-fry 2–3 minutes until vegetables begin to soften but remain slightly crisp. Add bean sprouts and sliced scallions and cook 30–45 seconds more.

Season filling: Add 2 tbs soy sauce, 1 tsp sesame oil, 1 tsp salt, and 1/4 tsp black pepper to the vegetables. Toss to combine and taste; adjust salt if needed. Remove from heat and let the filling cool 8–10 minutes so it is easy to handle and wrappers don’t tear.

Make cornstarch slurry for sealing: In a small bowl mix 1 tsp cornstarch with 1 tbs water until smooth. Keep nearby.

Assemble rolls: Lay one spring roll wrapper on a clean surface with one corner pointing toward you (diamond shape). Place about 2–3 tbs of the cooled filling about 2 inches up from the bottom corner. Fold the bottom corner up over the filling, fold the left and right corners toward the center, then roll tightly toward the top corner. Brush the top corner edge with a little cornstarch slurry and press to seal. Repeat with remaining wrappers and filling (should yield about 12 rolls).

Heat oil: Pour about 1 liter (or enough to submerge rolls) vegetable oil into a deep pot or heavy-bottomed pan. Heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wrapper — it should sizzle and float immediately without browning too fast.

Fry rolls: Working in batches (do not overcrowd), carefully lower 3–4 spring rolls into the hot oil. Fry 3–4 minutes, turning occasionally, until wrappers are golden brown and crisp. Use a slotted spoon to transfer cooked rolls to a wire rack or paper towel-lined plate to drain. Repeat until all rolls are fried.

Keep warm: If preparing ahead, keep finished rolls in a warm oven (200°F / 95°C) on a rack so bottoms remain crisp.
Sweet & Sour Sauce

Combine sauce ingredients: In a small saucepan, whisk together 1/2 cup rice vinegar, 1/2 cup granulated sugar, 3 tbs ketchup, 1 tbs soy sauce, and 1/2 cup pineapple juice. Bring the mixture to a gentle simmer over medium heat, stirring so sugar dissolves.

Thicken sauce: Mix 1 tbs cornstarch with 2 tbs cold water to form a smooth slurry. Slowly pour the slurry into the simmering sauce while whisking continuously. Cook 1–2 minutes until sauce thickens to a glossy, pourable consistency. If desired, stir in 1/4 tsp red pepper flakes for a touch of heat. Remove from heat and let cool slightly.

Adjust flavor: Taste the sauce and adjust balance — add a little more sugar for sweetness, a splash more vinegar for tang, or a tablespoon of water/pineapple juice to thin if too thick.
To Serve

Plate and garnish: Arrange hot spring rolls on a platter. Garnish with chopped cilantro and serve with sweet & sour sauce in a small bowl for dipping. Provide lime wedges on the side for squeezing over rolls if desired.

Serving suggestion: Serve immediately while rolls are hot and crisp. Leftovers can be reheated in a 350°F (175°C) oven for 8–10 minutes to re-crisp.
