Vanilla Bean Panna Cotta

Bloom gelatin
Sprinkle the powdered gelatin evenly over 2 tablespoons cold water in a small bowl. Let sit 5–7 minutes until gelatin swells and becomes spongey.

Heat dairy
Combine whole milk, heavy cream, and 1 tablespoon granulated sugar in a small saucepan. Add scraped vanilla bean seeds and pod (or 1 tsp vanilla extract). Warm over medium heat, stirring occasionally, until the mixture is hot and steam rises but does not boil (about 5–7 minutes).

Dissolve gelatin
Remove the vanilla pod if used. Add the bloomed gelatin to the hot cream mixture and whisk until fully dissolved, about 1 minute. If mixture has cooled too much, return to very low heat briefly—do not boil.

Strain and portion
Pass the panna cotta mixture through a fine-mesh sieve into a pouring jug to remove any undissolved bits. Divide evenly into four serving glasses or ramekins (about 1/2 cup each). Allow to cool to room temperature (~15 minutes), then cover and refrigerate until set, at least 2 hours or up to overnight.
Chocolate Mousse Layer

Prepare chocolate
Place chopped dark chocolate in a heatproof bowl. If using espresso powder, sprinkle it over 2 tablespoons hot water and stir to dissolve, then pour the hot espresso into the chocolate to melt it. Let rest 1–2 minutes, then stir until smooth and glossy. Allow to cool slightly but remain pourable.

Whisk yolks
In a small bowl, whisk together the egg yolks and 2 tablespoons granulated sugar until the mixture lightens slightly. Temper the yolks by stirring in 1 tablespoon of the warm chocolate mixture, then gradually whisk in another tablespoon until smooth (this prevents curdling).

Combine and cool
Stir the tempered yolks into the remaining chocolate until fully incorporated. Let the chocolate mixture cool to room temperature but not set.

Whip cream and fold
Whip 1 cup heavy cream to soft peaks. Fold one-third of the whipped cream into the cooled chocolate to loosen it, then gently fold in the remaining cream until fully combined and airy. Taste and adjust sweetness if desired.

Layer on panna cotta
Once the panna cotta layer is set (chilled at least 2 hours), spoon or pipe the chocolate mousse evenly over each panna cotta portion to form a second layer. Smooth the top lightly. Return to the refrigerator to chill for at least 1 hour to allow mousse to firm slightly.
Berry Compote & Garnish

Make compote
Combine 1 cup mixed berries, 2 tsp granulated sugar, 1 tsp lemon juice, and 1 tablespoon cold water in a small saucepan. Cook over medium heat, stirring occasionally, until the berries break down and the sauce thickens slightly, about 5–7 minutes. For a chunkier compote, mash a few berries with the back of a spoon; for a smooth sauce, use an immersion blender briefly. Remove from heat and let cool to room temperature.

Top the dessert
Spoon 1–2 tablespoons of the cooled berry compote over the chocolate mousse layer on each serving. Garnish each glass with a fresh mint leaf and a few whole berries if desired.

Chill the assembled desserts an additional 10–15 minutes if the compote warmed the mousse, then serve chilled. For best texture, consume within 24–48 hours.
