    Prepare tuna

    Pat the tuna dry with paper towels. Trim any sinew and dice the tuna into small 1/4-inch (5 mm) cubes so they hold their texture but are easy to bite.

    In a medium bowl, combine mayonnaise, Sriracha, gochujang (if using), soy sauce, sesame oil, lime juice, sea salt, and black pepper. Whisk until smooth and well combined.

    Add the diced tuna to the sauce and gently fold until all pieces are evenly coated. Taste and adjust seasoning: more Sriracha for heat, extra mayo for creaminess, or a pinch more salt if needed.

    Fold in the thinly sliced green onions and toasted sesame seeds. Cover and chill in the refrigerator for 10–15 minutes while you prepare the crunch topping. (Do not chill longer than 30 minutes to preserve tuna texture.)

Crunch Topping

    Heat a small nonstick skillet over medium heat. Add the neutral oil and swirl to coat the pan.

    Add the panko breadcrumbs and stir constantly for 2–4 minutes until they turn golden brown and crisp. Be careful not to burn them; reduce heat if browning too quickly.

    Remove pan from heat and immediately stir in chili oil (if using), fried shallots (or crispy onions), toasted sesame seeds, and fine sea salt. Let cool on a plate — the crumbs will crisp further as they cool.

Assembly & Garnish

    If using nori sheets, cut each sheet into 8 small squares or use wonton chips/crackers as a base.

    Spoon the chilled spicy tuna onto each nori square or chip (about 1–2 tablespoons per piece). Sprinkle a generous pinch of the crunch topping over each portion to provide texture contrast.

    Top with a few small pieces of diced avocado and cucumber, and a cilantro leaf. Finish with an extra tiny drizzle of sesame oil or chili oil if desired.
