Prep salmon
Pat salmon fillets dry with paper towels. Season both sides with salt and black pepper, pressing lightly so seasoning adheres.

Sear salmon
Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat until shimmering. Place salmon fillets skin-side down and cook without moving for 3-4 minutes, until skin is crisp and edges start to turn opaque. Reduce heat to medium and cook another 1 minute.

Finish in oven
Transfer skillet to preheated oven at 400°F (200°C) and roast for 4-6 minutes for medium doneness (internal temp ~125-130°F / 52-54°C), depending on thickness. Remove from oven and let rest while you prepare topping. If you don’t have an ovenproof skillet, transfer salmon to a baking sheet skin-side down for the oven step.

Toast panko
While salmon is resting or in the oven, heat remaining 1 tablespoon olive oil in a small skillet over medium heat. Add panko breadcrumbs and toast, stirring frequently, until golden brown and crisp, about 3-5 minutes. Transfer toasted panko to a bowl to cool slightly.

Mix crunchy components
To the cooled panko, add toasted sesame seeds and chopped roasted peanuts. Stir to combine so the nuts and seeds distribute evenly.

Make spicy binder
In a separate small bowl, whisk together mayonnaise, Sriracha, soy sauce, honey, toasted sesame oil, lime zest, and crushed red pepper flakes until smooth and slightly emulsified.

Combine topping
Fold the spicy binder into the panko-nut mixture until the crumbs are evenly coated but still loose and crumbly (not soggy). Stir in chopped cilantro and sliced scallion. Taste and adjust heat or salt: add an extra 1/2 tsp Sriracha for more heat or 1/2 tsp soy sauce for more umami.

Crisp topping (optional)
For an extra-crunchy finish, spread the combined topping on a small baking sheet and bake in the 400°F (200°C) oven for 4-6 minutes, watching closely so it doesn’t burn. Cool slightly before using.

Spoon a generous layer (about 2-3 tablespoons) of the spicy crunch topping onto the flesh side of each rested salmon fillet, pressing lightly so it adheres. If you prefer the topping warmed, briefly place the topped fillets back in the oven for 2 minutes.

Transfer salmon to plates. Garnish with extra cilantro leaves, a few microgreens or cucumber slices if using, and lime wedges on the side. Serve immediately so the topping stays crunchy.
