Soft Shell Crabs

    Prepare crabs

    Pat the soft shell crabs dry with paper towels inside and out. Remove the apron and gills if your fishmonger did not already do so. Lightly score the underside once with the tip of a knife to prevent curling while frying.

    Season both sides of each crab lightly with 1 tsp sea salt and 1/2 tsp black pepper, dividing evenly across the four crabs.

    Place 1/2 cup all-purpose flour in a shallow plate. Dredge each seasoned crab lightly in the flour, shaking off excess. Set crabs on a rack while you make the batter. The thin flour layer helps the batter adhere and prevents sogginess.

Tempura Batter

    Chill and prepare liquids

    Place a mixing bowl and whisk in the refrigerator or over a bowl of ice to keep everything cold. Keep the ice water and optional soda water chilled; cold batter yields a crisper tempura.

    In a small bowl, beat the cold egg lightly, then stir in the 1 cup ice water, the 1/4 cup chilled soda water (if using), and 1/2 tsp rice vinegar. Keep this mixture very cold; you can rest the bowl over a larger bowl of ice.

    In the chilled mixing bowl, combine 3/4 cup cake flour (or low-protein flour), 1/4 cup all-purpose flour, 2 tbsp cornstarch, and 1/4 tsp salt. Gently whisk to combine; do not overwork or aerate.

    Pour the cold liquid into the dry ingredients and mix with a few quick strokes of a fork or chopsticks. Leave some lumps — do not overmix. The batter should be thin but slightly viscous; if too thick, add a tablespoon of ice water at a time until it reaches the desired consistency. Keep the batter on ice and use immediately.

Frying & Finish

    Heat oil

    Pour about 1 liter of neutral oil into a deep pot or fryer. Heat the oil to 350–360°F (175–182°C). Use a thermometer for accuracy. Maintain this temperature; if frying multiple crabs at once, the temperature will drop, so fry in batches of one or two crabs depending on pot size.

    Test the oil by dropping a teaspoon of batter into it — it should sizzle and float to the surface, turning pale golden within 30–60 seconds.

    Fry crabs

    Working one or two at a time, hold a crab by the back shell, dip it into the batter so it's lightly coated, letting excess drip back into the bowl. Carefully lower the battered crab into the hot oil. Fry for 2.5–3.5 minutes per side (about 5–7 minutes total) until the batter is crisp and pale golden and the crab is heated through. Use a slotted spatula or spider to turn once halfway through to promote even browning. Avoid overcrowding the pot.

    Remove crabs to a wire rack set over a sheet pan or to paper towels to drain briefly. While still hot, sprinkle each crab with a light pinch of finishing salt (divide the 1/2 tsp across 4 crabs) and a drop of sesame oil if desired for aroma.

    Keep fried crabs warm in a low oven (200°F / 95°C) on a rack if frying multiple batches, so they remain crisp.

Tempura Dipping Sauce (Tentsuyu)

    In a small saucepan, combine 1/2 cup dashi, 2 tbsp light soy sauce, 2 tbsp mirin, and 1/2 tsp sugar (if using). Heat gently just until the sugar dissolves and the mixture is warm; do not boil long. Remove from heat and let cool slightly.

    Place a small mound of grated daikon in a small serving bowl or on the side of the sauce bowl for diners to mix into the tentsuyu as desired.
