    Prepare the skin

    Pat the salmon skin dry very thoroughly with paper towels. If any scales remain, remove with the back of a knife. Trim away excess fat or ragged edges so the pieces are roughly uniform (about 2–3 inches wide). Cut into strips or bite-size pieces as desired.

    Season

    Lay the skin pieces skin-side down on a tray or plate. Sprinkle kosher salt evenly over the skin (this draws out moisture and helps crispness), then sprinkle the ground black pepper. Let sit at room temperature for 8–10 minutes while you preheat the pan. Pat again very briefly to remove any accumulated moisture on the skin surface.

    Preheat pan

    Heat a large nonstick or well-seasoned cast-iron skillet over medium-high heat until hot, about 2–3 minutes. Add the neutral oil and let it heat until shimmering but not smoking.

    Cook skin

    Place the skin pieces into the skillet skin-side down (skin should contact the hot surface). Press gently with a spatula for 10–15 seconds to ensure full contact. Reduce heat to medium. Cook without moving for 2½–4 minutes, until the skin is deeply golden-brown and crisp around the edges. Flip and briefly sear the flesh-side (or fatty side you trimmed) for 20–30 seconds just to warm and set — avoid overcooking.

    Drain

    Transfer cooked skins to a wire rack set over a baking sheet or to paper towels to drain excess oil. Immediately sprinkle a light pinch of salt if desired while still hot to enhance crispness and flavor.

Finishing & Serving

    Plate the crispy salmon skin pieces on a serving dish. Squeeze lemon wedges over the skins to taste for brightness. Sprinkle toasted sesame seeds or furikake and the chopped chives or scallion for garnish and texture.

    Serve immediately while hot and crisp with soy sauce or ponzu on the side for dipping. Leftovers can lose crispness quickly; to re-crisp, warm skin in a 350°F (175°C) oven on a rack for 5–7 minutes.
