Pat the tuna dry with paper towels and cut into small 1/4-inch dice. Place diced tuna in a separate bowl. Add 1 teaspoon sesame oil, 1 teaspoon soy sauce, 1 tablespoon sliced scallion, and 1 teaspoon freshly ground black pepper. Gently toss to coat evenly. Taste and adjust seasoning — tuna should be salty-umami-forward but not overpowering.
